This is a simple, non-alcoholic version of a traditional Mojito, perfect for a Summer Baby Shower.

Ingredients:

  • 1/2 cup caster sugar
  • 1.5 kg watermelon
  • 2 limes, sliced
  • 2 cups chilled soda water
  • 1/2 cup lime juice
  • Sprig of mint
  • Ice cubes

Step 1 – Put sugar and 1 cup water in a small saucepan over medium heat. Cook, stirring until sugar dissolves. Increase heat to high. Bring to the boil. Boil, without stirring, for 5 minutes. Remove from heat. Set aside to cool.

Step 2 – Blend Watermelon until smooth.

Step 3 – Put lime slices in a large jug. Using the end of a rolling pin, slightly crush lime to release juice. Add watermelon, soda water, lime juice and cooled sugar syrup.

Step 4 – Add the mint and ice cubes. Serve immediately (serves 8).

  • 1l chilled soda water
  • 1l lemonade
  • 2 limes sliced
  • Juice of 1 lime
  • Sprig of mint
  • Ice

Step 2 – Now add the lime juice, lime slices and mint.

Step 3 – Add ice and serve immediately (serves 8).
